Spring is christening and baby shower season, and the baking gets lighter with it. Citrus sponges, soft colours, and cakes for the quiet days a family still wants to mark.

About two weeks

A christening or shower cake wants about two weeks, and four weeks for large or heavily decorated cakes if there is a lot of decoration. Spring weekends book up in clusters, so early is better than exact.

    Lighter than chocolate, and it cuts through a big lunch.

    Vanilla and lemon zest butter cookies, boxed for guests to take home.

Christening cakes

A christening cake should be quiet. Clean icing, one good detail, and the name piped by hand. The vanilla with real vanilla bean buttercream is what most families choose and it is the right choice. If the family wants something with more character, the orange cake with fresh zest cuts through a heavy lunch better than chocolate does.

Baby showers

Pink, blue, or firmly neutral until the reveal. That last one is more common than it used to be. Cupcakes for the table in matched colours, a cake for the middle, and choux puffs if the room is going to want something to pick up. Tell me the theme and I will match the colours to it; send a photograph and I will match them properly.

Everything else spring throws at you

Mother's Day, first communions, the birthdays of everyone born in April, and the first barbecue of the year that turns out to need a pudding. Spring orders tend to be smaller and closer together than summer ones. That suits a small kitchen.
