What's actually in one
Lamb, rosemary, garlic, sea salt and freshly ground black pepper. That is the filling, and there is nothing else hiding in it. Lamb has a much stronger flavour than pork, so it wants herbs with some backbone; the traditional pinch of sage would vanish in it. Rosemary holds its own, and the garlic rounds off the edge.

I roll and cut each one by hand, then crimp and cut the classic sausage roll shape. Working in small batches means it's all made to order pastry, filling, everything.
