Vanilla bean with real vanilla buttercream, and a deep chocolate sponge that people come back for. Beyond those, most things are possible: lemon, red velvet, coffee, coconut. The buttercream is piped tall in a proper rose swirl and finished to suit the occasion, whether that's gold and silver sprinkles or colours matched to a theme. Some of my best flavours came from a customer asking for something I'd never made, so ask. Cupcakes suit the occasions a big cake doesn't: an office celebration where nobody wants to find a knife, a dessert table that needs height and colour, a christening where guests come and go. For weddings I can match your colours and set them out as a tower, with a small cutting cake if you want the photograph.

Recipes passed through the years
I learned to bake at my gran's side. She catered weddings and christenings, and I started taking my own orders at fifteen. What I bake now are the recipes that came down through the family and got written properly along the way, which is why some of it, like the rum-soaked fruit cake at Christmas, you won't find in a supermarket.

I'll always be honest about that, because someone's health is not worth the risk.

Yes, as a box of 12. That is the ready-made version: two flavours, six of each, ordered and paid for online with no back and forth, and either collected free or posted to you. Custom orders like the ones on this page, where the colours are matched to a theme or the flavour is something you have asked me to invent, still start at 24 cupcakes so every flavour is a full tray baked properly. Cupcakes are made to order and don't appear in the pop-up, which is sheet cake by the slice and other fresh bakes.
