Zest first, then the glaze
The lemon goes in twice. Fresh zest is creamed into the batter at the start, which is when it gives up the most oil and the most flavour, and the glaze goes on while the loaf is still warm so it soaks in rather than sitting on top. The result is a dense, moist loaf that is sharper than it looks, and it is better on day two, which is exactly when it arrives.
Cut thick, packed flat
Slices go into the box in a single layer, so nothing sits on top of anything else and nothing arrives squashed. The box is designed around the standard UK letterbox slot and posts like a large letter. Each one carries a full ingredient and allergen label with a best-before date, the same as every order that leaves this kitchen.
