Order and pay online
A short menu goes up before each bake and you order from it online. Every item shows what is left, and ordering closes when the last one is spoken for. Anyone on my list sees the menu first and gets 10% off their first order.
One batch, sized to the list
Everything is baked in one batch sized to the order list, plus a few extras. Nothing is made in advance and held, which is only possible at a small scale and is the reason the batch runs out.
Collect free from the pop-up spot
Collection from the pop-up spot in Peterborough is free and the exact spot is confirmed with your order. Take yours frozen if you like, and the oven smell is yours whenever you want it.
A few extras on the day
I bake a small number over the order list and sell them at the pop-up, first come first served. Turning up early sometimes works. Ordering always does.

The sweet side of the same oven
Pastry is pastry, so the sweet bakes come out of the same session: cinnamon buns iced while they are still warm, apple and custard crumble, brownies, choux buns, and cookie boxes. Hot cross buns take over the whole tray in the run-up to Easter.
