The filling
Chicken, potato and thyme, and that is the list. It is the gentler pie of the two, and usually the one children and anyone who finds beef heavy will actually finish. The pastry and the crimp are the same as the beef pie, and it is filled just as generously.
One batch, sized to the orders
Pies are filled and crimped by hand in one batch sized to the order list, then frozen for you to bake at home. Nothing sits in a chiller for a week. That is only possible at a small scale, so the batch runs out.
Frozen for later
Pies and sausage rolls come frozen, ready to bake whenever you want them. It is the easiest way to feed people who turn up unannounced, and the version of hospitality that requires no actual effort on the day.
