Three cakes I bake vegan: vanilla, chocolate and carrot, all iced with vanilla buttercream made with vegan butter. You can order them now for collection or local delivery. The letterbox versions are still being worked out, and I would rather tell you that than take a postal order I cannot fill.

    The spiced carrot sponge, iced with the vanilla vegan-butter buttercream instead of the cinnamon buttercream the standard one gets.

The vegan cakes are made to order for collection in Peterborough and local delivery, the same as any other celebration cake here. Only the postal version is waiting on a recipe. Which one, what date, how many people. That is enough to get me started.

The same icing on all three

Every one of them is finished with vanilla buttercream made with vegan butter. That matters more than it sounds: with vegan cake it is usually the icing that lets it down, because dairy-free spreads go slack and the whole thing slides. Vegan block butter behaves like butter, so the buttercream holds a piped edge and tastes of vanilla rather than of margarine.

Why the carrot one is worth a mention

The spiced carrot sponge takes to vegan baking better than almost anything, because the oil and the fruit were doing the work that eggs and butter do elsewhere. The vegan version is the same sponge as the standard one; what changes is the top. The standard carrot cake carries a cinnamon buttercream made with dairy butter, so if that is the one you have had before, expect a slightly different finish.

What the letterbox versions still need

A cake that travels is a harder problem than a cake that gets collected. It has to survive a day or two in a box on somebody's mat, cut cleanly cold, and still be worth eating at the other end. I have not worked those recipes out yet, so vegan boxes are not on sale by post and there is no waiting list promise attached to them beyond this: when they are ready, the list hears first.

Vegan does not mean allergen-free

This gets confused often and it is worth being blunt about. Vegan means no animal ingredients. It does not mean no nuts, no gluten and no cross-contact. Everything here is baked in a home kitchen where all fourteen major allergens are present, including nuts. Every order carries a full ingredient and allergen label, and if the allergy is severe, talk to me before you order.
