Why these ten

These are the flavours that travel, the same ten the cupcake boxes run on. A cake going through the post needs to be moist enough to survive a day or two and firm enough to hold its shape in a box, and every one of these does both without help. The vanilla is made with real vanilla, seeds and all, with strawberry jam through the middle. The chocolate sits under coffee buttercream, which keeps it from being sickly, and the orange has fresh zest in the sponge and in the buttercream, so the citrus comes through twice. Red velvet gets white chocolate buttercream, the spiced carrot is the one people order again, and lemon, salted caramel, cookies and cream, caramelised biscuit and strawberries and cream round out the ten.

Cut thick, packed flat

Slices go into the box in a single layer, so nothing sits on top of anything else and nothing arrives squashed. The box is designed around the standard UK letterbox slot and posts like a large letter. Each one carries a full ingredient and allergen label with a best-before date, the same as every order that leaves this kitchen.

Sending it to somebody else

Most letterbox cake goes to a person who isn't you. Add a message with your order and it goes in the box; there is no invoice inside a gift. If you want it to land on a particular day, say so and I'll post it to arrive around then, though the last mile is Royal Mail's and I won't pretend otherwise.

What cakes can you post through a letterbox?

How long do letterbox cake slices keep?

Each box carries a best-before date on its label. The slices are baked for your order, and they are at their best in the first few days, which is when they arrive.

Can I mix cake slices and brownies in one box?

Yes, that is the treats box. Say how you want it split and I'll build it that way.

Boxes are baked to order in Peterborough and posted anywhere in the UK. If you are local and would rather collect, that is the pastries and pies side of the kitchen.
